Sizzling chickpea burgers
With summer in full swing, is there anything better than firing up the bbq and eating under the stars?
These chickpea burgers are a nice change from traditional meat burgers and will win over your vegetarian guests. We cooked them on our retreat in Mallorca where they went down a treat.
Plus they are so simple and easy to prepare. We served them here with a beautiful nutty Romanesco sauce (on our next recipe blog). You can opt for a lighter dipping sauce such as a lime vinaigrette or a lemon herb yoghurt sauce. Or you can get creative with a tahini dressing.
Ingredients
1. One jar chickpeas drained and well-rinsed 2. 1/2 red onion finely diced 3. 1 cup oats 4. Handful finely chopped coriander 5. 3 tbsp red wine vinegar 6. 2 tbsp peanut butter (no salt added) 7. 1 tsp cumin 8. 1 fresh garlic, finely chopped 9. 2 tbsp olive oil 10. Black pepper and sea salt to season
Method
1. Mash chickpeas completely with a fork 2. Add all the other ingredients in a bowl 3. Form into burger patties 4. Cook on the bbq for approximately 10 mins or until getting a nice charred burger 5. If you can't do a bbq you can bake them in the oven or grill them in a grill-pan
