Quick and Easy Pizza
A super healthy and delicious pizza made with cauliflower and almond flour with the added benefit of being gluten and grain-free should you so need. It is really easy to make (promise!) and don’t be scared of the cauliflower as a pizza base. We were so surprised by the taste, we cannot get enough of it. Even kids love it and they think it’s the real deal. For this blog we used grilled Mediterranean vegetables with fresh goat’s cheese from Ibiza but of course use your favourite pizza toppings.
Ingredients Pizza Base Ingredients 280g cauliflower 1 egg white, beaten slightly 100g ground almonds 80g buckwheat flour 1 tsp sea salt 1 tsp black pepper 1/2 tsp bicarbonate of soda Pizza Toppings Ingredients 1 red pepper 1 green pepper 1 courgette Handful cherry tomatoes 200g Fresh goats cheese 10 or so tbs tomato sauce (preferably made from fresh tomatoes)
Method Pizza Toppings 1. Cut the courgettes and red pepper lengthwise 2. Grill on a very hot griddle or BBQ pan smeared slightly with ghee 3. Cut the cherry tomatoes in half Pizza Base 1. Preheat the oven to 200 C 2. Mix thoroughly all the pizza base ingredients into a bowl until you form a sticky dough 3. Spread the dough out with the back of a spoon on a lightly greased tray. 4. Bake the dough blindly in the oven for about 25 mins, but keep on checking in case it starts turning very crispy. 5. Scatter the pizza toppings (tomato sauce, grilled vegetables, tomatoes, fresh goats cheese) on the cooked pizza base and put back in the oven for a few minutes until the goats cheese is slightly melted. We also like to add the goats cheese after we take the pizza out of the oven. 6. You can serve with a big green salad for a healthier meal.
